A semi-hard sheep’s milk cheese with a smooth texture and washed/natural rind. The flavours vary with the season but are typically rich, sweet and fatty, with aromas of hazelnut.

Many of the sheep whose milk goes into Bibury were part of the original herd at Ram Hall, where Berkswell was made until 2023.
Bibury, the latest cheese from King Stone Dairy is a firm sheep’s milk cheese styled after the smooth Pyrenean cheese Ossau Iraty. The rind is washed early on and then allowed to grow some light mould coverage. David sources the sheep’s milk from nearby Sheaf House farm, which purchased the flock from Ram Hall after they stopped making Berkswell in 2023. The sheep are milked seasonally, from March through October, though the first Biburys were made in June of 2024 and are just ready in time for the run-up to Christmas, at around 3 months old. This will be a seasonal cheese going forward, with the first of the season ready in midsummer and cheese continuing to be available until we sell the last of the autumn cheeses in the springtime.
