Wakebridge, Derbyshire
All the milk for Wakebridge is from the farm’s own ewes, and are fed primarily on herbal leys and whey.
John Bailey and Heather Benbow are veterinarians who sold their successful practice and bought Wakebridge Manor Farm in Derbyshire, looking to raise sheep and make cheese from their milk. Their son-in-law Dan is an ex-brewer and home cheesemaker and was recruited to be their head cheesemaker.
The project was ambitious, with the scale to handle up to 3000 litres of milk per day, and included a cheese dairy, a sheep shed and milking parlour sufficient to support a flock of 650 milking ewes – an onsite boutique hotel and restaurant are still works in progress.
