Foxearle is named after the ancient Saxon term for the three local parishes where the dairy, vine leaves, and cows are based.

Foxearle is a collaboration between Pevensey Cheese Company and Neal’s Yard Dairy, created exclusively for Neal's Yard Dairy. The project began in 2023 to address the challenge of seasonal production: their dairy produces more cheese than needed during summer, but demand far outstrips supply during the busy Christmas season.

To solve this, we sought a cheese that could mature for longer periods while developing the savoury-sweet, bold flavours that younger Pevensey cheese hints at. The result is Foxearle, named after the ancient Saxon term for the three local parishes where the dairy, vine leaves, and cows are based.

The cheese undergoes a warm maturation phase, after which it's wrapped in vine leaves soaked in pear eau-de-vie and then cold-aged to finish. This process gives Foxearle a distinctive sweet and boozy flavour, with the alcohol enhancing the fruity notes produced by the natural moulds acting on the milk fats and proteins at low temperatures.
