Raedwald


This seasonal cheese is produced from January to March at Fen Farm Dairy in Bungay, Suffolk. It is an oozing, soft cheese with earthy, smoky flavours imparted by its washed rind.  

Unfortunately we have now sold out of our limited allocation of Raedwald. We look forward to having it back as part of our Community Cheese of the Month Selection in March.

Bungay, Suffolk

Raedwald was the Anglo-Saxon King of the Eastern Angles (early Suffolk and Norfolk) between 599-624 CE. Archaeologists believe they have found his tomb at Sutton Hoo, roughly 30 miles from Fen Farm Dairy.

Raedwald is made by the team behind Baron Bigod. In the winter, they use their surplus milk to produce this seasonal cheese. Inspired by the washed rind cheeses of Haute-Savoie, Raedwald is made using the rich, high-cream milk collected on winter afternoons. This cheese is a celebration of seasonal variation in Fen Farm’s Montbéliard herd.

We’ve worked closely with the team at Fen Farm Dairy since they started making their flagship cheese, Baron Bigod. As a result, we tasted some of the earliest batches of Raedwald, providing feedback and making suggestions to aid in the development of this new cheese.
